Blueberry Smoothie
Blueberries blended with yogurt and milk, strained free of skins, and thickened to a mildly thick drink.

2 · Mildly Thick
Flows off a spoon but noticeably slower than water. Sipped from a cup or through a wide straw, and it leaves a light coating as it moves. A drink level rather than a food one.
Suitable for anyone who finds food hard to chew or swallow. Graded IDDSI Level 2 (Mildly Thick) — thickened drink — the texture standard used in dysphagia care and soft diets.

Important Guidance
- Level 2 is a drink thickness, not a food texture. The amount of thickener is set by the product you use and by the level someone has actually been prescribed, so follow the manufacturer's directions rather than a fixed spoon count.
- Let it stand for the time the thickener specifies before judging it. Most keep thickening for several minutes, and a drink that looks right straight after mixing can be too thick by the time it reaches the table.
- Test the finished drink with the IDDSI flow test at the temperature it will be served at. Warming or chilling changes how it flows.
- Strain before thickening. Seeds, skins and fruit fibres are the one thing a thickener cannot fix.

Contains dairy. Naturally gluten-free. Blueberry skins must be strained out; they do not break down in a blender.
