Creamy Scrambled Eggs
Slow, gently-stirred scrambled eggs with small, soft curds — one of the easiest and gentlest proteins to serve.

5 · Minced & Moist
Soft, moist, and finely minced into very small pieces that mash easily with light pressure from a fork. Any sauce or gravy should cling rather than separate.
Suitable for anyone who finds food hard to chew or swallow. Graded IDDSI Level 5 (Minced & Moist) — soft, minced & easy to swallow — the texture standard used in dysphagia care and soft diets.

- 4 large Eggs
- 1/8 tsp Kosher salt Or more to taste
- 1/2 tbsp Butter or olive oil
- Optional Freshly ground black pepper and chopped chives For serving
Instructions
Crack the eggs into a medium bowl, add the salt, and whisk until smooth and frothy. Let them sit for 5 to 10 minutes.
Melt the butter in a medium nonstick pan over medium-low heat. When the butter begins to sizzle, whisk the eggs once more, then pour them into the skillet. Immediately use a flexible spatula to swirl in small circles around the pan, without stopping, until the eggs look slightly thickened and very small curds begin to form, about 30 seconds.
Change from making circles to making long sweeps across the pan until you see larger, creamy, fork-tender curds, about 20 seconds.
When the eggs are softly set and slightly runny in places, remove the pan from the heat and leave for a few seconds to finish cooking. Give a final stir and serve immediately, with an extra sprinkle of salt, a grind of black pepper, and a few fresh chopped herbs if desired.
Serving Tips
Important Guidance
- Cooking low and slow with constant stirring is what keeps the curds small, soft, and moist — this is naturally one of the gentlest proteins on this whole site.
- Mash the finished eggs lightly with a fork right on the plate for an easy Level 4.
- Leave off the chopped chives and cracked pepper for anyone at Level 4 or below — stir a little extra butter or cream through instead for moisture.
- Don't let the eggs firm up fully or brown — overcooked scrambled eggs turn dry and crumbly, which is harder to manage, not easier.
