Texture level

3 · Liquidised

Pours smoothly like a thick drinkable soup. No lumps, no bits, and no chewing at all. Can be taken from a cup or spoon, and should not hold its shape on the plate.

Suitable for anyone who finds food hard to chew or swallow. Graded IDDSI Level 3 (Liquidised) — smooth & drinkable — the texture standard used in dysphagia care and soft diets.

Serving Tips

Important Guidance

  • Use purée rather than tinned pie filling. Pie filling is already sweetened and spiced, and it sets much thicker, which will push this past Level 3.
  • The toasted seeds this soup is usually finished with are not appropriate at any of the texture levels on this site. Leave them off.
  • Thickener is a last resort, not an ingredient. Blend and strain first, then add it only if the soup still runs thinner than the level that has been prescribed, following the product’s own directions.
  • It thickens noticeably as it cools. Level 3 should still pour off a spoon, so re-check it once it is at serving temperature rather than straight off the heat.
