Watermelon Sorbet
A refreshing 4-ingredient watermelon sorbet, blended smooth and frozen — bright, simple, and naturally sweet.

5 · Minced & Moist
Soft, moist, and finely minced into very small pieces that mash easily with light pressure from a fork. Any sauce or gravy should cling rather than separate.
Suitable for anyone who finds food hard to chew or swallow. Graded IDDSI Level 5 (Minced & Moist) — soft, minced & easy to swallow — the texture standard used in dysphagia care and soft diets.

- 6 cups Frozen watermelon chunks
- 1 cup Watermelon syrup Or simple syrup, agave, or honey
- 1/2 cup Water
- 2 tbsp Fresh lime juice
Instructions
Add 3 cups of watermelon, 1/2 cup of syrup, 1/4 cup of water, and 1 tablespoon of lime juice to a high-speed blender. Blend until smooth, pausing to push the mixture down if the blades get stuck.
Transfer the sorbet to a metal loaf tin or other freezer-safe container and place in the freezer.
Repeat with the remaining ingredients, then serve immediately or store covered in the freezer for up to 1 week.
Serving Tips
Important Guidance
- Frozen desserts carry a texture risk that's easy to miss: as sorbet melts in the mouth it can quickly turn into a thin, fast-moving liquid, which can be harder to control than the frozen scoop looks. Talk to an SLP or dietitian before serving frozen desserts to anyone at Level 4 or below.
- Let the sorbet sit at room temperature for a few minutes before serving so it's soft and slushy rather than rock-hard — easier to scoop and safer to swallow.
- Serve in small spoonfuls and let each one soften slightly in the mouth rather than serving a large frozen scoop all at once.
- This recipe has no dairy and very little fiber, so it's a good option for a cold treat once texture has been confirmed as appropriate.
